Ingredients

    1 pound red potatoes
    1 pound celery root
    1 pound rutabagas
    1 pound carrots
    1 pound parsnips
    2 onions
    2 leeks
    2 tblsp rosemary
    1/2 cup olive oil
    10 garlic cloves

Directions

combine all ingredients, cut in 1 inch pieces, with the olive oil. Spread on two cookie sheets. Roast at 400 degrees for 30 minutes. Adjust sheets. Roast 45 minutes longer.
