Introduction

Ingredients

1 1/2 lbs cod filets
1 onion quarter
Lemon Slice
1 can of cream of shrimp soup
3 tbs of flour
1/4 cup skim milk
1 oz of shredded mozzarella cheese
1/4 white wine
2 tbs of parsely
2 tbs of grated parmesaen cheese
1/2 cup soft bread crumbs or crushed stuffing mix
2 tbs of butter (melted)
1/2 tsp paprika
Directions
Preheat oven to 400 degrees
Cut fish into cubes
Place fish, onion and lemon in greased (non stick cook spray), add water to cover fish. Bring to a boil, then reduce heat and simmer for 5 minutes
Meanwhile in a small sauce pan, BLEND soup and flour gradually and then stir in Milk and Wine. Stir until thick and bubbly. Stir in Mozz Cheese and parsely. Heat through.
Carefully Drain the fish removing onion and lemon. Fold in the sauce and then spoon mixture into a greased (non stick cook spray) casserole dish.
Combine bread crumbs, parm cheese, and butter and paprika. Sprinkle this mixutre on top of the casserole.
Bake 20 minutes at 400 degrees, then broil for 2 minutes, let stand for 10 minutes and serve.
