Ingredients

    8 cups baby spinach leaves
    1 (16 oz ) jar sliced pickled beets, drained
    1/3 cup light Italian dressing
    1/2 teaspoon dried tarragon
    1 pound med. shrimp, cooked, and cleaned
    1 cup reduced fat feta cheese, crumbled
    1/4 cup pine nuts, toasted

Directions

Combine baby spinach leaves and beets in a large bowl. Stir tarragon into Italian dressing; pour over salad and toss to coat. Divide salad mixture among 4 serving plates; top each serving with shrimp, feta cheese and toasted pine nuts
