Ingredients

* 6 Eggs
* 1 Whole Zucchini sliced thin
* 2 Cups Spinach
* 8 Large Mushrooms
* 1/2 cup chopped onion
* 2 tsp garlic
* 1/2 tsp rosemary
* 1/2 tsp thyme
* 1/2 tsp basil
* 1/2 tsp oregano
* 2tbsp olive oil
Directions
Makes 4 servings
Take thinly sliced zucchini, sliced mushrooms, spinach, onions, and garlic and sautee in a cast iron skillet with olive oil and all spices.
Once cooked until slightly soft, evenly distribute vegetables in skillet and reduce heat to medium. Beat 6 eggs and pour over veggie mix. Once eggs are mostly set, but not finished, place slices of cheese on top and place in the oven. Cook on 350 degrees for approximately 10 minutes or until cheese is golden on top.
