Ingredients

    1/4 cup soy sauce
    2 tbls sugar
    1 tbls vinegar
    1 tbls ketchup
    1/2 tsp ground ginger
    2 garlic cloves, minced
    1 lb boneless skinless chicken breasts cut into strips
    2 tbls vegetable oil
    1 package (16 oz) stir fry vegetables
    1 can (8 oz) unsweetened pineapple chunks, drained
    hot cooked rice

Directions

In a small bowl, combine the first 6 ingredients, set aside. In a large skillet or wok, stir-fry chicken in oil for 5-6 minutes or until juices run clear. Add the veggies; stir-fry for 3-4 minutes or until crisp and tender. Stir in pineapple and reserved soy suace mixture; heat through.
