Introduction

Modified from recipe on box of Hodgson Mill Milled Flax Seed. These are very good and high in Omega-3. They smell wonderful while baking and are very good! Ingredients

    1/4 cup Hodgson Mill Milled Flax Seed
    3/4 cup Hodgson Mill Whole Wheat Flour
    3/4 cup white flour
    1/2 cup Splenda
    2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 cup Egg Beaters
    1 1/2 cup finely chopped apples (peeled and cored)
    1 tablespoon extra light olive oil
    1/2 cup Silk Light Soy Milk, plain
    1/2 cup chopped walnuts
    2 tablespoons unsweeted applesauce

Directions

Preheat oven to 400 degrees F. Spray 12 hole muffin pan. Blend dry ingredients together in a bowl. In a separate bowl, combine egg, olive oil, applesauce, and soy milk. Add dry ingredients to egg mixture and stir until just blended. Fold in apples and nuts. Batter will be thick. Fill well-greased muffin cups 2/3 full. Bake 400 degres 18 - 20 minutes or until top springs back when touched. Yield - 12 muffins
