Introduction

Ingredients

3 cups high fiber angel-hair pasta; cooked
15 spears asparagus; cut to bite size pieces
2 boneless skinless chicken breast halves
1/2 c chopped onion
1.5 cups fresh mushrooms (I used baby portabellas)
1/2 cup low sodium chicken broth
1 Tbsp. extra virgin olive oil
1/4 c feta cheese (I used herb & garlic kind)
3 Tbsp sundried tomatoes; chopped
Pinch of red pepper flakes, to taste
Directions
Cook pasta according to pkg directions. Meanwhile, cut chicken into bite-sized cubes & place n skillet with olive oil.
Cook until nearly done. Add asparagus and mushrooms, continue cooking until chicken is done. Add chicken broth & tomatoes and cover pan; cook until asparagus is crisp tender.
Add pasta, red pepper flakes to taste, and feta cheese.
Remove from heat.
Add a thickener if you wish - OR if you wish to use leftovers as a soup the next day, use whole can of broth. It's VERY soupy but the broth is even better the next day as it picks up more of the asparagus and spice of the pepper flakes overnight!

Cutting back on pasta? Leave out the pasta and add another chicken breast - It's just as good!
