Introduction

I made these in the large muffin tins but you can use regular size muffin pans as well. This recipe is based on the 6 larger size. These are good reheated for breakfast even the day after. Ingredients

    6 large eggs
    1/2 cup skim milk
    1 cup fresh spinach, chopped
    1 cup deli turkey sliced or diced
    1/4 cup + 2 tablespoons 2% Cheddar Cheese
    Salt and Pepper to taste

Directions

Preheat oven to 350. Line muffin tins with paper liners. Beat Eggs, skim milk, salt and pepper together. Divide spinach between 6 cups. Divide turkey between 6 cups. Place 1 Tablespoon of cheddar cheese in each cup. Pour egg mixture over and gently tap pan on counter to help settle ingredients.

Bake for 15-20 minutes, until cups are set. Cool on a wire rack.
