Ingredients

    5 Red Bell Peppers, tops cut off, seeds and ribs removed
    1 cup (uncooked) Brown Minute Rice
    1 can diced tomatoes, undrained
    1 can black beans, drained and rinsed
    2 Tbsp taco sauce
    3/4 Tbsp chili powder
    1/2 tsp cumin
    1/2 tsp ground oregano

Directions

Preheat oven to 350 degrees.
Cook rice according to package instructions.
To rice, add remaining ingredients and mix.
Scoop rice mixture into hallow red peppers
Bake peppers for 30 minutes.
