Number of Servings: 8

Ingredients

    1 lb. beef round steak
    14.5-oz can diced tomatoes, drained
    1 onion, sliced
    1 green bell pepper, cut into strips
    1 red bell pepper, cut into strips
    1 Tbs. chopped fresh cilantro
    2 cloves garlic, minced
    1 tsp. chili powder
    1 tsp. ground cumin
    1 tsp. ground coriander
    1/4 tsp. salt
    8 (8") flour tortillas
    Optional Garnishes (not included in nutritional info): sour cream, salsa, shredded lettuce, shredded cheese

Directions

Place steak in a 4-5 qt. slow cooker. Combine vegetables and seasonings; spoon over steak. Cover and cook on LOW setting 6-8 hours. Shred meat using 2 forks. With slotted spoon, spoon meat mixture over tortillas and garnish as desired.
