Introduction

Gluten-Free, dairy-free, low sugar cookies. Gluten-Free, dairy-free, low sugar cookies.
Number of Servings: 24

Ingredients

    1 cup unsalted almond butter, stirred well
    3/4 cup Sucanat
    1 large egg
    1/2 tsp baking soda
    1/4 tsp sea salt
    3 oz. dark chocolate(70% cocoa or greater) broken into small pieces


Directions

Preheat oven to 350 degrees. In a medium bowl, stir together 1st 5 ingredients until blended. Stir in chocolate. Drop dough by rounded tablespoonfuls onto parchment lined baking sheets. Bake for 10-12 minutes or until lightly browned. Let cool on baking sheets for 5 minutes. remove to a wire rack and let cool for 15 more minutes.

    Yummy! Best chocolate chip cookies ever!
    To make these vegan you can substitute 1TBSP ground flaxseeds and 3 TBSP water mixed together for the egg.
    You can also use white sugar 3/4 cup instead of the sucanat and gluten free chocolate chips instead of the broken chocolate

    these cookies are wonderful. Gluten free, easy. Be careful because they do have a fair amount of fat due to the almond butter. Also you can toast up raw almonds and turn them into almond butter in the food proc and then finish the recipe in the food proc. Just mix in the choc chips by hand. - 1/1/12

    I"ve been looking for a healthier cookie and I found it! I didn't have the chocoloate so I left it out..but they are delicious anyway!! Soft and chewy..now I have to try NOT to eat the whole batch at once! - 1/21/11
