Introduction

I find making 1 dish and eating a single serving daily is the easiest way for me to get protein in the morning. This is one of my favorite breakfast dishes. Ingredients

    18 eggs (whites only)
    1.5 cups regular feta
    1 cup cooked spinach (4 cups raw spinach)
    1 white onion, diced and sauteed
    1 large slicing tomato, meat removed, diced
    1 tsp cavendar's greek seasoning

Directions

preheat oven to 350
cook onions and spinach in saute pan
mix all ingredients in large bowl and then pour into greased 8x13 pan
bake for approx. 45 min
makes 12 servings
