Introduction

Ingredients

    3 lge. sweet potatoes, peeled and cut in 1/2" cubes
    1 large onion, chopped
    1 T. extra virgin olive oil
    2 T. chili powder
    3 garlic cloves, minced
    1 t. ground cumin
    1/4 t. cayenne pepper
    2 cans (15 oz. ea.) black beans, rinsed and drained
    1 can (28 oz.) diced tomatoes, undrained
    1/4 c. brewed coffee
    2 T. honey
    1/2 t. salt
    1/4 t. pepper
    1/2 c. shredded reduced fat Monterey Jack (Opt.-not in stats.)

Directions

In nonstick Dutch oven coated with cooking spray, saute sweet potatoes and onion in olive oil until crisp tender. Add the chili powder, garlic, cumin, and cayenne; cook 1 minute longer. Sitr in the beans, tomatoes, coffee, honey, salt, and pepper. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until potatoes are tender.

Optional: Sprinkle with cheese before serving.

Each serving approx. 1 cup.

    This looks great...I'll be trying it with out the coffee...so hopefully that won't make a big difference. ;) - 7/26/11
