A concoction of leftovers... pretty darn good! A concoction of leftovers... pretty darn good!

Ingredients

    Chicken Breast, no skin, 16 ounces
    Butter, salted, 2 tbsp
    Onions, raw, 1 cup, chopped
    Carrots, raw, 1 medium
    White Wine, 2 fl oz
    brown rice (1 cup cooked), .5 serving
    *Lundberg Wild Blend Brown Rice-1/2 cup cooked
    Chickpeas (garbanzo beans), .5 cup

Directions

Cut chicken in to small pieces.
Melt butter in large skillet. Add onion and carrots. Cook until onions are slightly wilted. Add chicken and wine. Cover and let simmer until chicken is mostly done. Add 1/2 rices and garbanzo beans. Cook until heated through.
