Introduction

Ingredients

    For the Salsa:
    1 Mango, Chopped
    1 C. Golden and/or Orange Tomatoes, Chopped (I like to use halved grape tomatoes)
    1/2 Sweet Yellow Onion, Chopped
    1 Serrano Chili, minced
    Juice and zest of 1 lime
    Dash of Salt
    Fresh Cracked Pepper

    For the Tilapia:
    4 Tilapia Fillets
    1 tbsp Olive Oil
    Dash Salt
    Fresh Cracked Pepper

Directions

Mix all the salsa ingredients and set aside.

Heat a non-stick pan over medium heat. Add olive oil to pan and let it come to heat.

Sprinkle salt & pepper over 1 side of the tilapia. Plan in pan, seasoned side down, and season other side.

Cook approximately 2 minutes on each side, until fish flakes easily with a fork and is white through.

Serve fish topped with salsa. Try some roasted asparagus on the side.

    Incredible!
    So fresh and tasty! I broiled the fish and added a small amount of cilantro to the salsa. My husband loved this. He ate a full serving, but the serving was large enough that I saved half of mine for fish tacos for the next day's lunch. - 6/28/19
