Ingredients

    Ingredients:
    Asparagus, fresh, 2 cup
    Potato, raw, 2 cup diced
    Onions, raw, 1 medium (2-1/2" dia)
    Celery, raw, 1 stalk, medium (7-1/2" - 8" long)
    Garlic, 3 clove
    Vegetable Stock-Imagine Organic, 4 cup
    Olive Oil, 2 tbsp


Directions

Makes 6 1-cup servings

Dice the onion.
Peel the potatoes and dice.
Chop the asparagus into 2" pieces.
dice the celery.

In a medium heavy bottomed pot, heat the olive oil and add the onion. Saute until soft. Add the asparagus, potato, celery, and garlic and stir to combine. Add the vegetable stock and bring to a simmer. Cook until all vegetables are soft. Puree and strain. Add 1 cup of water to thin if needed.

Serve with a dollop of yogurt
