Ingredients

    1 bag dried split peas, rinsed and drained
    10 c. water
    1 meaty ham bone
    1 c. chopped onion
    1 c. chopped celery
    1 c. chopped carrot
    1 1/2 tsp Thyme
    1.5 tsp. smoked sea salt

Directions

Place ham bone and water in a 6 qt. stockpot. Cover and cook on low until ham easily removes from bone (about 1 hour).

Remove ham from water, and set aside to cool. Add remaining ingredients to ham stock, and simmer, stirring often, until peas are tender, about 1 hour. Remove half of the soup, puree in a blender and return back to stock pot. If the soup is too thick, add a water to get the desired consistency.

Remove ham from ham bone, and trim off fat. Chop into bite sized chunks and add to soup (after puree has been returned to pot.) Heat through and serve.
