Introduction

This soup is quick and easy. You may substitute for any seafood or vegetables you prefer. This soup is quick and easy. You may substitute for any seafood or vegetables you prefer.

Ingredients

    3 oz shrimp peeled and deveined
    2 large sea scallops quartered
    1.5 oz halibut cut into cubes
    1/2 cup fresh spinach
    1/2 cup snap peas
    1/4 small onion sliced thin
    1/4 cup chinese cabbage sliced thin
    1 medium scallion chopped
    3 cups fat free or low fat vegetable broth

Directions

drizzle a small amount of olive oil (or vegetable broth) in the bottom of a pot. Saute the oinions about 3 to 5 minutes. Add the broth, seafood, spinach and snap peas.
Simmer about 5 minutes or until the seafood is cooked.
Serve in a bowl and top with the shredded cabbage and scallions. Drizzle with low sodium soy sauce (optional)
