Introduction

Great low calorie chili! Great low calorie chili!
Number of Servings: 6

Ingredients

    1 T canola oil
    1 lb boneless, skinless chicken breast, cubed
    4 tsp chili powder
    2 tsp ground cumin
    1c chopped onion
    3/4c chopped green bell pepper
    1 can (10 3/4oz) reduced fat cream of chicken soup
    3/4 c water
    1 1/2c whole kernel corn, frozen
    2 cans ( about 15oz each) cannellini beans, rinsed and drained

Directions

Heat oil in 4-quart saucepan over medium high heat. Add chicken, chili powder, cumin, onion and pepper and cook until chicken is cooked through and vegetables are tender.

Stir in soup, water, corn and beans and heat to a boil. Reduce heat to low. Cover and cook 5 minutes, stirring occaisionally.

Serves 6 (about 1 1/2 cup each)
