Ingredients

Olive Oil, 1 tbsp
Onions, 1/2 cup, finely chopped
Garlic, 1 clove minced
Taco Seasoning, 1 1/2 tbsp
Lentils, 1/2 cup rinsed and drained
Vegetable Broth, 1 1/4 cup
Dole Shredded Lettuce, 2 cups
Baked Tostitos Scoop Tortilla Chips, 3 oz
2% Mexican Four Cheese blend, 1/4 cup
Fat Free Sour Cream, 4 tbsp
Salsa, 1/4 cup
Directions
1. Heat oil in saucepan over medium heat. Cook onion until it begins to soften, 3 to 4 minutes. Add garlic and continue to saute another minute.
2. Add lentils and taco seasoning. Cook until spices are fragrant and lentils are dry, about 1 minute. Add broth or bouillon and bring to a boil. Reduce heat, cover and simmer until lentils are tender, 30 minutes to 50 minutes. Stir occasionally, and add a bit of boiling water if liquid has evaporated before lentils are cooked through.
3. When lentils are tender or almost tender, uncover and simmer until extra liquid has evaporated.
4. Arrange half of the chips on each of two plates. Top with t
lettuce, then with lentil mixture, cheese, sour cream and salsa.
