Ingredients

    1/3 C. Butter or margarine, melted (I used Smart balance 50/50 sticks)
    1 1/2 C. Applesauce
    1 large egg
    3/4 C. packed brown sugar
    1 1/2 C. whole-wheat flour (I used 1 C whole-wheat and 1/2 C. white whole-wheat)
    3/4 tsp. baking soda
    1 1/2 tsp. cinammon
    1/2 tsp. allspice
    1/2 tsp salt
    1/2 C. raisins (I used 1/4 C. craisins and the recipe is calculated for such)

    Topping (optional and not included in calorie count)
    1/4 C. Packed brown sugar
    2 Tbs. whole-wheat flour
    1/8tsp. cinnamon
    1/8 tsp. nutmeg
    1 Tbs. butter or margarine, softened
    1/4 C. chopped walnuts

Directions

Preheat oven to 375 degrees. Grease the bottom of a 9x9-inch baking pan. In a medium bowl, combine melted butter, applesauce, egg and brown sugar; mix well. In a large bowl, sift or stir together whole-wheat flour, baking soda, spices and salt. Add butter mixture to flour mixture; mix well. Stir in raisins. Pour batter into pan. Sprinkle topping over batter (if using). Bake for about 45 minutes, or until a toothpick inserted in the center comes out clean and the top springs back when lightly touched in the center.
I cut mine into 9 generous servings but you can always go smaller or bigger.
