Ingredients

Cookie Crust
2 Tablespoons Butter
¼ Cup Honey
½ Cup Light Brown Sugar
1 each Egg White
1/3 Cup Applesauce
2 teaspoons Vanilla
1 Cup Whole Wheat Flour
1 teaspoon Balking Soda
½ teaspoon Salt
1 teaspoon Ground Cinnamon
1 ½ Cups Oats
1/3 Cup Raisins
Topping
8 Ounces Low- Fat Cream Cheese
¼ Cup Juice- any type, no added sugar
2 tablespoons Grated Lemon Zest
4 each Kiwis, peeled and sliced
½ Cup Peaches, sliced and drained
½ Cup Strawberries, thawed and sliced in ½ length wise
1 each Banana, medium sized, cut into ¼ inch slices
Directions
Crust:
Preheat oven to 350 F.
Combine the butter, honey, and brown sugar together in mixing bowl.
Add egg white and combine. Mix in the applesauce and vanilla.
Topping:
In a separate bowl, combine flour, baking soda, salt and cinnamon together.
Add sugar mixture, stir just to combine. Add the oats and raisins, just to combine together. Spread the batter in an 8X8 pan, spray with non stick cooking spray. Bake until slightly browned, 30 to 35 minutes.
In a mixing bowl whip the cream cheese with the juice and lemon zest until light and creamy. Spread the cream cheese mixture over the cookie. Arrange the sliced fruit over the top. Slice into wedges with a pizza cutter and serve.
