Introduction

Firm and crispy squares are a great accompaniment to soups and stews or as a side dish. Very fast to put together. Try serving with a warm tomato sauce or a little enchilada gravy or add shredded meat and serve as an entree.

Ingredients

    Martha White yellow corn meal- plain, 1 cup
    Baking Powder, 1 tsp
    Salt, 1/2 tsp
    Splenda, 1/8th tsp
    Milk, 1%, 1/2 cup
    Egg, fresh, 1 large, beaten
    1 large Jalapeno Pepper, diced
    Cheese, Colby-Jack Reduced Fat Cheese, 6 oz
    Canola Oil, 2 tbsp
    Creamed Corn, 3.5 cup
    Leeks, green tops cut into ribbons and diced, 1/4 cup

Directions

Preheat oven to 450 degrees. Preheat 9" x 9" pan then spray with Pam.
Mix all of the ingredients in a large bowl with a wisk and pour into heated pan.
Back 30 minutes until crisp on the sides and bottom.
