Ingredients

3 Boneless & Skinless Chicken Breasts
1 cup Light mayonnaise
1 cup Light Sour Cream
1 tsp curry powder
2 packages of Whole Mushrooms, trimmed and chopped
1 medium Onion, chopped
1/4 cup reduced-sodium Chicken Broth
2 heads Broccoli, trimmed into florets
1 cup Shredded Cheddar Cheese
1.5 cups Shredded Cheddar Cheese
Directions
- Preheat oven to 350 degrees.
- Boil chicken breasts for 15-20 minutes, until cooked through.
- Meanwhile, mix mayonnaise, sour cream, curry powder, broth and cheese together with a whisk. Set aside.
- Chop mushrooms, onions and broccoli.
- Once chicken is cooked, dice into bite-sized pieces. Set aside.
-In a 9"x13" glass casserole dish, layer down the broccoli, onions and mushrooms. Top with chopped chicken. Top chicken with cheese curry sauce. At this point, top with the remaining 1+1/2 cups of shredded cheese on top.
- Bake in preheated oven for 30 minutes, until cooked and bubbly. Enjoy! :)
