My mom's recipe from years ago. My mom's recipe from years ago.
Number of Servings: 4


    1 can of jack mackerel in brine (drained but reseve a little liquid)
    1 large egg (slightly beaten)
    1/2 cup white flour
    1/2 cup crushed saltine crackers
    2 Tbsp oil


Drain and reserve liquid from mackerel. I also take out the backbones. Add egg, flour, and crushed crackers and stir together. If a little dry, add some of the liquid from mackerel and make 4 patties. Fry in cooking oil on top of stove.

Makes 4 servings.
