Ingredients

    Olive Oil, 1 tbsp
    FLOUR - All Purpose, 1/4cup
    Garlic, 1 clove minced
    Pork tenderloin, 1.5 lbs
    Kitchen Basics, Beef Stock, less sodium, (4 c.=1 box=32 oz)
    V8 Vegetable Juice, Low Sodium, 8 oz (1 large can)
    Mixed Vegetables, frozen, 16oz (peas, carrots, corn)
    Yellow Sweet Corn, Canned, 1 can (optional)
    Mushrooms, canned, 1 cup
    Oregano, 2 tbsp
    *bayleaf, 1
    Onions, raw, 1 cup, chopped
    Barley, 1/2 cup

Directions

Heat oil in large soup pot. While heating, coat meat and onion in flour. Add garlic and meat/onion mixture in pot until lightly brown. Stir in beef stock, V8 juice, oregano & bayleaf. Bring to a boil and then reduce to simmer for 30 minutes. Add remaining vegetables and barley. Cook on med. low/medium for 30 minutes. Makes 8 1-cup servings. Enjoy!
