Introduction

Number of Servings: 4

Ingredients

    Butter, salted, 2 tbsp
    Olive Oil, 1 tbsp
    Garlic, 4 clove
    Onions, raw, 0.5 cup, chopped
    Mushrooms, fresh, 1 cup, pieces or slices
    2 TBS Flour
    Half and Half Cream, 0.5 cup
    Milk, nonfat, 1.5 cup
    Cream of Mushroom Soup, 1 can (10.75 oz)
    Lemon Juice, 1 fl oz
    4 oz Scallops, raw,
    4 oz imitation crab meat,
    1/2 c. chopped Parsley,
    Pepper, black, 1 tsp
    Pepper, red or cayenne, 0.2 tsp

    Fresh grated Parmesan Reggiano Cheese

Directions

In a large saute pan, melt butter and olive oil. Saute onions, garlic and mushrooms until soft. Stir in flour and coat all the vegetables well. Cook enough to begin a little browning. Stir in the 1/2 and 1/2. Gradually pour in the milk mixing constantly to eliminate lumps. Mix in the can of mushroom soup, and stir in the vegetables & heat through-About 10 minutes. Last hit it with the pepper, lemon juice and parley. Serve over whole wheat pasta.

Makes 4-6 servings depending on your side dish options.
If you want to reduce the fat you can easily switch to only skim milk and leave out the half and half. I wanted to add this to my meal planner though so I had to be honest!
