Introduction
This is a modified version of the recipe "Divinity Pumpkin Pie" as submitted by user MENHALLS. The main thing I changed is that I did not add a crust. I did go ahead and add the whole can of pumpkin (1.5 cups, rather than 1 cup). And I'm dividing the servings into 8, rather than six. I used soy milk, as called for in the original recipe. Ingredients

2/3 cup sugar
1 tsp cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/4 tsp. cloves
3/4 tsp. salt
2 cups soy milk
1/4 cup cornstarch
1.5 cups canned pumpkin (15 oz. can)
2 egg yolks
10 regular sized marshmallows (not mini)
Directions
In a heavy pot, mix sugar, cornstarch, and spices together. Add pumpkin and milk. Whisk until there are no lumps. Cook over med-low heat until thickened.
Beat egg yolks. Pour about 1/2 cup of hot pumpkin mixture gradually into egg yolks, stirring constantly. Return mixture to top of stove and cook another 2 minutes.
Turn off burner. Add marshmallows, stir (be patient!) and remove from heat one they are melted. Cool completely.
Pour into a greased pie tin and chill. Chill at least four hours.
