Number of Servings: 6

Ingredients

    1/2 of a medium yellow onion (chopped)
    3 cloves of garling (minced)
    1 lb. Ground Turkey
    .5 cups of frozen yellow corn
    1 can Black Beans (I prefer Ranch Style Brand)
    1 package of Taco Seasoning

    Condiments (quantities included for nutritional purposes)
    3 tbsp Margarine
    1 cup Tomatos (diced)
    1 cup lowfat sour cream
    3 ozs of Reduced Fat Mexican style Cheese
    6 Corn Tortillas

Directions

Makes approximately 6 servings

Melt margarine in skillet ( I prefer electric) and add chopped onion and minced garlic. Place lid on skillet and let simmer until onions are soft.

Then add ground turkey and cook until browned.

Then add drained black beans and taco seasoning per instructions.

Continue on low to medium heat until sauce thickens. Then stir in frozen corn until corn is heated through.

Serve on tortillas, taco shells, or chips.

Tomatos, sour cream, and cheese are recommended condiments.
