Ingredients

    1 cup chopped onion
    1 cup chopped green bell pepper
    2 tbs chopped garlic
    2 tbs olive oil
    5 cups cut okra
    8 drumsticks
    2 cans stewed tomatoes
    1 can rotel
    2 tsp cajun seasoning
    salt
    pepper

Directions

Heat oil in skillet. Add onions, bell pepper and garlic, cook until soft. Add chicken (precooked, remove skin and bones) and seasoning to mix. Add okra, tomatoes and rotel. Simmer on low until okra is desired consistancy. I usually taste and add more seanoning to taste. We like it with more of the cajun seasoning. Serve over rice if desired. It makes 10, 1-cup servings.
