Sour Cream, reduced fat, .5 cup
Curry powder, .5 tsp
*Extra Light Olive Oil, 1 tbsp
Garlic, 2 clove
Mushrooms, fresh, 3 cup, pieces or slices
Carrots, raw, 1.5 cup, chopped
Chicken Broth or Bouillon, 4 cup (8 fl oz)
*Brown Rice, long grain, 1 cup
Organics Red Lentils, 1 cup
Ginger Root, 3 tsp
*Cumin (GROUND), 1.5 tsp
Turmeric, ground, 1 tsp
*Coriander (GROUND), 1.5 tsp
Pepper, black, .25 tsp
Spinach, frozen, .5 package (10 oz) yields -- thawed and squeeze dried
Onions, raw, .5 cup, chopped
Directions
small bowl - combine sour cream with curry powder; put in fridge until ready to use.
in large saucepan, heat olive oil over med/high heat. Add garlic, mushrooms, and carrots. Cook for 5 minutes, stirring often, until veggies are softened.
Add broth, rice, lentils, giner root , ground coriander, cumin, turmeric, and pepper. Bring to boil. Reduce heat to low. Cover and simmer for 20 minutes, stirring occasionally.
Stir in spinach and green onions. Cover and simmer for 3-4 more minutes, until rice and lentils are tender. Remove from heat and serve immediately.
Top each serving with dallop of curry-cream.
