Number of Servings: 60

Ingredients

    Butter, unsalted,1/2 cup
    Honey, 1/4 cup
    Egg, fresh, 1 large
    Whole Wheat Flour, 2 cup
    Baking Soda, 1 tsp
    Cinnamon, ground, 2 tsp
    Nutmeg, ground, 1 tsp
    Salt, 1/4 tsp
    Zucchini, 1 cup, grated
    Oatmeal, 1 cup
    Raisins, 1 cup

Directions

Preheat the oven to 375. Cream together the butter and honey. Then add the egg and beat well. Stir together baking soda, cinnamon, nutmeg, and salt. Add this mixture alternately with the zucchini to the egg mixture. Stir in the oatmeal and raisins. Drop by teaspoons onto greased cookie sheets. Bake for 10 to 12 minutes.

    Not the best healthy cookie I've had, but not terrible. The directions leave out when to put the flour in, so don't forget to add it if you try this one. - 1/30/08
