Ingredients

    1 1/2 tsp active dry yeast
    2 Tbl. warm water
    4 Tbl. honey
    1 Tbl. extra virgin olive oil
    1 tsp. salt
    1 1/4 c. warm water
    1 c. flax seed, ground
    1 1/4 c. whole wheat flour
    1 3/4 c. bread flour
    non-stick cooking spray

Directions

In large mixing bowl, dissolve yeast in 2 Tbls. water. Set aside for 5 min. or til bubbly. Mix in honey, oil, salt, and remaining 1 1/4 cups water. Add ground flax, whole wheat flour, and 1 cup bread flour. Mix well.
Stir in enough of remaining bread flour to make a soft dough. Turn dough onto lightly floured surface. Knead for 10 min or til smooth and elastic. (I use my kitchenaid mixer and bread hook - knead for 8 min on #2). Coat 9 x 5 inch loaf pan with non-stick spray. Shape dough into a loaf and place in pan. Cover and let rise in warm place for 1 hour until loaf doubles.
Preheat oven to 350. Bake 40 - 50 min or til loaf is browned and sounds hollow when tapped. Remove from pan and cool on wire rack.
