Ingredients

    Atlantic Salmon (fish), 16 oz
    Spinach, fresh, 2 cup
    Mushrooms, fresh, 1 cup, pieces or slices
    Red Ripe Tomatoes, 1 large whole (3" dia)
    1/3 cup Good Seasons Sundried Tomato Dressing,

Directions

Place salmon fillets, skin sides down in an 11 x 7 inch baking dish sprayed with cooking spray. MIX remaining ingredients until well blended; spoon over salmon.
Bake at 375 degrees for 20 to 25 minutes or until salmon flakes easily when tested with a frok. You may substitute red snapper or orange roughy fillets for the salmon.
Makes 4 servings.
I put this dish together a couple of hours before I baked it. It is VERY yummy! Tastes like something you would get at an up-scale restaurant!

    This was very good. I couldnt find sundried tomatoe dressing so I used garilc and herb, which was very yummy. - 9/24/07
