Ingredients

    Cooked Chicken Breast, no skin, 12 ounces
    Canned Fire Roasted Tomatoes, 1 can
    Zucchini, baby, 1 large
    Celery, raw, 3 stalk, medium
    Carrots, raw, .75 cup, chopped
    Mushrooms, canned, .5 cup
    Butter, salted, 1 tbsp
    Sour Cream, 4 tbsp
    Colby and Montery Jack cheese (fancy shredded), 0.33 cup
    Cooked & Drained Ronzoni Smart Taste Rotini Pasta, 7 oz
    Cumin, Paprika and Black Pepper (pinch of each)

Directions

Shred or chop pre-cooked chicken breast. Chop vegetables, drain mushrooms. Sautee vegetables in melted butter in non-stick skillet over med-high heat for approximately 3-5 minutes (I prefer mine a bit crisp). Add spices, chicken, pasta, tomatoes (do not drain!), sour cream and cheese, stir well. Heat through for a few more minutes.

Serve with whole wheat tortillas. Makes 6 servings.
