Introduction
This is a family favorite. People always ask for the recipe!! I have added a bit less rice than usual to make it more protein based. If you don't care, use a whole cup of rice! Ingredients

1 medium onion chopped
2 large stalks celery chopped
2 green bell peppers chopped
1/2 cup white rice - dry
1.5 cups chicken broth
2 Tb creole or Old Bay Seasoning
28 can whole tomatoes
2 large chicken breasts cooked and chopped
1 package smoked turkey sausage chopped
10 oz of shrimp.
*optional add some ceyenne pepper to taste to make it more spicy - about 1/2 tsp
Directions
Saute chopped onion, green pepper and celery in pan with cooking spray. Cook about 5 min,
Add dry rice, chicken broth, tomatoes and spices. Stir and break up the larger tomato pieces.
Add the chicken and sausage and cook on stove until rice is almost done and the juices are absorbed.
When it is absorbed add the shrimp and mix through until heated. So good!! I like to eat mine with Frank's Red Hot Sauce for added kick!
Makes 10 cups (5 - 2 cup servings)
