Ingredients

    2 Cups Birds Eye Ultimate Southwest Blend Frozen Vegetables.
    7 Large Eggs
    2 Roma Tomatoes Sliced Thin to get at least 7 slices in each.
    2 Jalapeno Peppers De-seeded and minced
    1 Cup Shredded Cheddar Cheese reserve half for topping
    1 tsp Red Pepper Flakes or more if you like it hotter
    2 tsp. Black Pepper
    1 tbsp Light Sour Cream per serving
    1 tbsp Salsa per serving

Directions

Preheat oven to 350. Mix whisked eggs, cheese(reserving half of it), jalapeno peppers, Black and Red Pepper Flakes in a bowl. In a stove to oven skillet, I use cast Iron, heat olive oil on stove at med heat, add frozen Vegetable mix heat until thawed and any water has evaporated. Turn off stove. Add Egg mixture. Top with thin sliced Roma tomatoes and remaining cheese. Transfer to oven. Bake approx. 20 Minutes or until set.
Sprinkle with more Black Pepper and top with Salsa and Light Sour Cream included in nutritional info. Makes 8 Pie size Slices.
Note: I did not use salt, so if you add it , it is not included in nutritional info.
