Introduction

Vegetarian version of Cuban black beans and rice for the crockpot! Vegetarian version of Cuban black beans and rice for the crockpot!
Number of Servings: 6

Ingredients

    1 lb dried black beans (2 cups, sorted and rinsed)
    1 lg onion, chopped (1 cup)
    1 lg bell pepper, chopped (1.5 cup)
    5 Cloves Garlic, finely chopped
    2 dried bay leaves
    1 can (14.5 oz) diced tomatoes, undrained
    5 cups of water
    2 T olive oil
    1.3 T ground cumin
    1 jalapeno chili, finely chopped
    1 t salt
    3 Cups hot cooked rice

Directions

1) In 3- to 4- quart slow cooker, mix all ingredients except rice.

2) Cover; cook on high setting 6-8 hrs

3) Remove bay leaves, Serve beans over rice.
