Introduction

using coconut flour and stevia to make a low cal low carb muffin using coconut flour and stevia to make a low cal low carb muffin

Ingredients

    3 eggs
    2 tbs butter or coconut oil, melted
    1/4 cup pumpkin (i use libby's canned pumpkin)
    1/4 c brown sugar
    20 drops liquit stevia
    1/2 tsp pumpkin pie spice
    1/4 tsp salt
    1tsp vanilla
    1/4 c sifted coconut flour (measure before sifting)
    1/4 tsp baking powder

Directions

preheat oven to 400 degrees F, makes 6 muffins
Blend together, eggs, ild, pumpkin, sugar, spice, salt and vanilla. combine coconut flour with baking powder and whisk into batter until there are no lumps. pour batter into greased muffin cups. Bake for 18 minutes
