Ingredients

    1 pkg seitan
    1 medium onion, chopped
    1 green pepper, chopped
    1/2 cup frozen corn
    1 tbsp chili powder
    1/4 cup water
    8 corn tortillas
    Salsa

Directions

Cut the seitan into small bite-size pieces and set aside.
Spray a large non-stick skillet with cooking spray.
Cook the onion over medium-high heat until soft, stirring occasionally, about 5 minutes.
Add the corn, green pepper, seitan, chili powder and water. Continue cooking, stirring until spices are blended, until heated through and the peppers are soft.
Warm tortillas as desired. Place fajita mixture along with 1 tbsp of salsa in each tortilla.
Fold up & enjoy!

    I made this with out the corn and used red and yellow peppers and seasoned with a little of Ms Dash Southwester seasoning. I also served it over couscous. - 9/1/08

    I made these with tempeh instead of seitan (it's just what I had on hand), and I put cheese on top (I'm not vegan), but I really liked them! It was a good use for my tempeh, which I didn't have any special plans for. :) - 8/18/08

    I cut my Carbs and calories by using Mission Extra Thin Corn Tortillas since 2 equal 80 calories instead of the 116 in the recipe - 10/30/11

    A nice dish. Simple to make, vegan and yummy. It wasn't quite spicy enough for me. I think the next time I make it I will add some jalapeno to the vegs. - 8/26/09
