Introduction

Hearty stew, great on cold winter nights. Left overs freeze very well. Hearty stew, great on cold winter nights. Left overs freeze very well.

Ingredients

    2 lbs extra lean ground beef (5-7% fat)
    2 cups onion (one large)
    1 tsp dried basil
    1 tsp dried oregano
    2 cloves garlic minced ( I use more)
    28 oz canned diced tomatoes
    4 cups chopped green peppers (4 peppers)
    30 oz canned tomato sauce
    6 cups beef broth
    2 cups vegetable juice (I use Spicy V-8)
    2 cups uncooked brown rice

Directions

Brown ground beef with onions and drain. Place in 7 qt slow cooker and combine with remaining ingredients. Cook on low for 6-8 hours. Or place in 8 pt soup pot and simmer for 1-2 hours. 1 cup per serving.
