Introduction
My Mother taught me to make fabulous gravy growing up but I needed to lighten it up a bit. Instead of mixing my flour with some form of fat, I mix it with cold water before adding which eliminates the added fat. No one could tell at Thanksgiving. They raved about my gravy as usual! Ingredients

1 cup pan drippings (best flavor), fat removed, or stock or broth
3 cups water
1/2 c flour
4 T McCormick Poultry gravy mix
1 c poultry giblets, cooked & chopped finely (neck meat, gizzard & heart, no liver!)
salt & pepper to taste
sometimes I add a little crushed sage
Directions
Makes 20 - 1/4 c servings
Pour pan drippings (for best flavor), fat removed, or stock and water into saucepan and bring just to boil.
Mix flour and gravy mix with a small amount of COLD water (I usually shake in a small jar to mix) before adding to saucepan.
Wisk until blended and thick.
Reduce heat and add giblet meat, finely chopped. Add salt, pepper and sage, if using, to taste
