Ingredients

**Flax Seed Meal (ground flax), 1/2 cup
Egg white, 4 serving
Egg, large 2 eggs
Brown Sugar, 1 cup, packed
Cinnamon, ground, 3 tbsp (I like cinnamon so add extra- could be 3 tsp. if you are not a cinnamon lover.)
Baking Powder, 4 tsp
Salt, 1 tsp
Milk, 1%, 2 cup
Applesauce, sweetened, 1/2 cup
Coconut Oil, 1/8 cup (softened)
Vanilla Extract, 4 tsp
Raisins, 1 cup, packed
Pecans, 1 cup, chopped
Old Fashioned Quaker Oatmeal- Plain 6 cups
Directions
This is a double recipe, I tweaked to make a bit healthier.
Makes 18 pieces. Is a bit more "cake like" than granola like.
I mix all of the ingredients together and grease a 9x13 pan. Pour in and allow it to sit a few hours covered in the refrigerator. I put in a preheated oven at 350 and bake covered for 45 minutes. I remove the cover and bake another 15-20 minutes uncovered.
I store this in my refrigerator and my family and I eat it through out the week for breakfast,
