Ingredients

    225g Chicken breast skinless and boneless
    1 red, green and yellow pepper
    200 grams of mushrooms
    100g frozen peas
    100g dwarf/french beans
    1 medium onion
    1 tin low fat condensed chicken soup
    150g brown rice
    1 tin of chopped tomatoes with basil
    1/2 pint boiling water
    olive oil

Directions

pre-soak rice for 10 mins in half pint of boiling water,
in a slow cooker add and stir together tomatoes, chicken soup (still condensed), rice and water
brown chicken and onions with one spray olive oil
add to slow cooker and stir in chicken, onions and peppers after half hour add peas, mushrooms and dwarf beans and leave to simmer, stirring often, until sauce is reduced and thickened and rice has softened
