Ingredients

    2 lb sweet potatoes, peeled and cut into 2-in pieces
    3 medium carrots, peeled and cut into 2-in pieces
    1/4 cup packed brown sugar splenda
    2 tbsp butter (light margarine ok)
    2 tsp ground giner
    1/2 tsp grated orange peel
    1/2 tsp ground cinnamon
    2 egg whites
    1/3 cup chopped pecans

Directions

Preheat oven to 350. Lightly coat 2 qt baking dish with cooking spray. Put sweet potatoes in a large pot and cover with water by 2 inches. Bring to a bhoil. Add the carrots. Cook until both are tender (about 15 min) and drain well. Transfer the potatoes and carrots to a large bowl and add the sugar, butter, ginger, peel, and cinnamon. Mash until well combined and slightly chunky. Season with salt and pepper. Stir in the egg whites and transfer to baking dish. Sprinkle with nuts and bake until well puffed and hot through (about 30 minutes).
