Ingredients

onions
spinach
mushrooms
chicken breast
spinach
water as needed
laughing cow queso cheese
eggs
egg beater
milk
Directions
makes 6 to 8 slices
Warm the oven to 350
Place olive oil in the pan with onions and cook until the onions are translucent.
As the onions are cooking mix the eggs and egg beaters with the milk. Add salt and pepper to taste.
Add the basil and oregano. After the onions are cooked add the mushrooms and the chicken until warm. After about a minute, add the laughing cow cheese. Add some water if some liquid is needed.
When the ingredients are mixed and warmed, spread the ingredients evenly in the pan and pour the egg mixture over the chicken mixture.
Place in the warmed oven for 25-35 minutes. Test if the eggs are done by cutting into the center. If there is no liquid it is cooked.
Let sit for 5 minutes and then dig in. This can be served like a quiche or in a tortilla with avocado as a breakfast taco.
