Introduction

You can substitute any vegetables you like in this dish. Fresh spinach, Peppers, olives, green onions, chives, garlic, all make fine additions. Frozen may make the mix too watery. Cheese may be substituted as well depending on taste. I think Swiss may work well. I think the Parmesan is a great browning cheese however and would use that whenever possible. Ingredients

    7 LARGE or 9 MED EGGS
    4 oz. fat free half and half
    2 oz. shredded cheddar
    1 Tb, grated parmesan
    1 Tb. Olive Oil
    1 Tb. Butter
    1 Cup minced fresh broccoli
    1/2 C. Mushrooms
    1 Cup diced fresh asparagus into bit sized pieces
    1 Large Shallot
    Salt and pepper

Directions

Warm broiler. On cooktop, saute shallots in olive oil and butter in broil safe pan, like a cast iron skillet. Toss in broccoli, mushrooms and asparagas. Saute till tender but not soft, 5 minutes on medium fire. Season to taste. Mix eggs with half and half. When vegetables are done, add egg mixture. Season again if you wish. Place cover over pan and let cook for 5-8 minutes over medium heat or until set. Add cheddar and finally top with parmesan. Take lid off and place under broiler to melt and brown slightly the cheese. This step depending on your broiler should not take more than a couple of minutes, Watch closely to not burn. Slice into four quarters and serve hot.
