Awesome GF granola with real oats! Be sure to soak overnight as suggested to neutralize the phytic acid to allow nutrients to be better absorbed. Ingredients

    6 cups oats, Bob's Red Mill Gluten Free oats
    6 cups water
    1/2 cup lemon juice, plain yogurt, or homemade whey
    1 cup coconut oil
    1/2 cup honey
    1 tsp salt
    1 cup chopped nuts
    2/3 cup dried fruit

Directions

soak oats in water with lemon juice (or yogurt/whey) overnight. Strain, then spread out on 2 cookie sheets. Put in an 170 degree F oven for 2-4 hours until oats are dehydrated (dry when crumbled). In a separate bowl, heat coconut oil until melted, then add the honey and salt. Stir, then add in the dehydrated oats and the rest of the ingredients. Spread back on the cookie sheets and dehydrate again at 170 degrees F for another 4-6 hours. Takes some preplanning but it's a big batch that lasts for months and it's worth it! makes 15 servings.
