Ingredients

1 pound ground chicken (I used Perdue)
1 cup salt free seasoned bread crumbs
1/4 cup Southwestern Eggbeaters
8 tablespoons (1 small can) Old El Paso chopped green chiles
1 cup chopped onion
1 cup (small can) Hunt's No Salt Added Tomato Sauce
2 teaspoons Mrs. Dash Extra Spicy Seasoning Blend
Salt and pepper to taste
Directions
Makes 12 "muffin-sized" servings.
Place all ingredients in a large bowl and mix well by hand.
Fill muffin tins with mixture.
Sprinkle grated Parmesan cheese on tops (optional)
Bake at 400 degrees for 25 minutes
