Ingredients

    Scallops, 1/2 cup frozen or fresh
    Earth Balance Natural Buttery Spread, .33 tbsp
    Cilantro, raw, .33 tbsp
    Garlic, 1 tsp
    Lettuce, mixed spring greens, 3 cup
    Walnuts, .0625 cup, chopped
    Blue Cheese, .25 cup, crumbled, not packed
    *Heinz Distilled White Vinegar, 1 tbsp
    Lime Juice, .0625 cup
    Madhava Agave Nectar, 1 tbsp
    Garlic, .5 tsp
    Pepper, black, 1 tsp
    Olive Oil, .5 1tsp

Directions

First, start by sauteeing the bay scallops in the Earth Balance Buttery Spread, 1 tsp of garlic and 1 tsp cilantro at medium to medium/low heat. The scallops will be cooked thoroughly when they are no longer "clear" looking. Remove from heat and set aside. Now it's time to make your dressing. Mix together white vinegar, agave nectar, lime juice, black pepper,, and oil Place salad greens on a large plate or in a large bowl, sprinkled bleu cheese and walnuts over the top followed by the bay scallops. Either pour your dressing over the salad and mix well, or keep it on the side for dipping. Serves 1-2.
